Beetroot–Quinoa Patties

Tired of the same repetitive diet meals? Try this simple yet special beetroot–quinoa patty recipe, made with only a few ingredients and surprisingly easy to prepare.

Ingredients:

For the vegetable patties:
  • 250 g cooked beetroot, finely chopped
  • 75 g cooked and drained red quinoa
  • 75 g feta cheese, crumbled
  • 1 teaspoon walnut oil
  • dill
  • salt and pepper
For the topping:
  • cabbage or lettuce
  • pickled red onion in apple cider vinegar
For the dressing:
  • 3 tablespoons grated horseradish
  • 100 ml sour cream
  • lemon juice
  • dill
  • salt and pepper

Method:

  • Finely chop the cooked beetroot, then mix it with the quinoa, feta cheese, walnut oil and dill. Season with salt and pepper to taste.
  • Shape the mixture into patties, then refrigerate for 24 hours.
  • Mix the grated horseradish with the sour cream, lemon juice, dill, salt and pepper.
  • Layer fresh lettuce or cabbage onto a spelt bun or avocado cream base, then place the beetroot–quinoa patty on top. Add another layer of fresh vegetables and pickled red onion.
  • Finally, drizzle with the dressing.
