- 300 g turkey breast
- 3–4 cups mixed vegetables (zucchini, carrot, eggplant, broccoli, cauliflower)
- 2 tablespoons grapeseed oil
- salt and pepper
- fresh coriander
- lemon
Method:
- Preheat the oven to 200°C. Slice the turkey breast into strips and season to taste.
- Toss the diced vegetables with salt and pepper, then spread them onto a baking tray lined with parchment paper.
- Place the turkey strips among the vegetables and roast for 20–25 minutes, stirring once or twice during cooking.
- Serve with fresh coriander and lemon, optionally drizzling with a little oil before serving.
