Roasted Vegetables with Turkey

A light yet filling dish where roasted vegetables and seasoned turkey complement each other in a simple and harmonious way.

Ingredients:

  • 300 g turkey breast
  • 3–4 cups mixed vegetables (zucchini, carrot, eggplant, broccoli, cauliflower)
  • 2 tablespoons grapeseed oil
  • salt and pepper
  • fresh coriander
  • lemon

Method:

  • Preheat the oven to 200°C. Slice the turkey breast into strips and season to taste.
  • Toss the diced vegetables with salt and pepper, then spread them onto a baking tray lined with parchment paper.
  • Place the turkey strips among the vegetables and roast for 20–25 minutes, stirring once or twice during cooking.
  • Serve with fresh coriander and lemon, optionally drizzling with a little oil before serving.
